Cheyenne Dining - CarrotsApples
Apple trees have been around since prehistoric times. Apples are in season in late September and early October, making them perfect for fall dishes, both sweet and savory.

Carrots
Hardy carrots are a root veggie with orange, white, purple, red, and yellow varieties. Carrots are in season in fall and early winter and are a wonderful base for soups.

October was National Chili Month, so in honor of this occasion, Cheyenne Mountain Resort created their recipe of the month, Green Elk Chili a warm and comforting fall dish. Ground elk meat is cooked with onions, garlic, and spices and paired with pureed tomatillos and green chilies for a hearty meal.
